I LOVE to bake. I actually started doing it semi-seriously after I became diabetic. Ironic, eh? I typically bake full-sugar classic recipes, but I’m trying to figure out how to make some lower-carb treats. I’ve made Splenda snickerdoodles and Splenda cheesecake, but that’s about it. Any other good recommendations?

Splenda ultimate double chocolate cookies! Get some white chips and follow the package directions for chocolate-white chocolate chip cookies, sub. 1/2 c. of the white sugar with Splenda. For even more added yumminess (though not necessarily healthiness) add half a bag of dark chocolate chips and use Hershey’s Special Dark cocoa. It’s like the perfect melding of Oreo and chocolate chip cookie.
My hubby loves to bake and this is our favorite recipe. He also does a fabulous loaf of bread, amazing brownies and terrific muffins. It’s hard with the watching carbs thing, but we manage and I’ve started to figure out which ones require serious early boluses. Good on you for working the baking and the diabetes together!
